I often get asked what we feed our family on a weekly basis, so I’m making it a priority to share some of our favorite weeknight dinners that are both adult and kid approved (like these Greek meatballs, lettuce wraps and this pizza casserole). This Hummus Chicken is one such recipe!
This baked hummus chicken recipe is an easy, delicious and healthy weeknight meal. It’s made with simple ingredients and ready in 30 minutes and even my kids love eating it! Serve it with a side of tzatziki, in a pita, over a Greek salad, etc.
Hummus Chicken: Ingredients & Substitutions
This hummus chicken recipe doesn’t have many ingredients, but here are a few notes on possible substitutions.
- Chicken breasts. I recommend using boneless, skinless chicken breasts to make this recipe.
- Olive oil. For the best flavor use a high-quality olive oil, you can also use avocado or canola oil.
- Spices (paprika, garlic powder, onion powder). One of the things that makes this recipe special is the spice mixture that coats each piece of chicken. Feel free to adjust it to your tastes, if desired.
- Dried oregano. I used dried oregano but you can use fresh if desired.
- Hummus. Choose your favorite variety and flavor – and feel free to mix it up! We are a classic hummus family (because of my picky son), but roasted red pepper hummus, spicy hummus, etc. would be great.
- Lemon juice. freshly squeezed or bottled both work well!
How to make Hummus Chicken

Make Spice Mixture
In a small bowl, mix together salt, pepper, paprika, garlic powder, onion powder and oregano. Then, place the chicken in a bowl and drizzle with olive oil, turn to coat each breast with oil.
Coat chicken breasts
Next, evenly space the chicken breasts in a baking dish. Then sprinkle each chicken breast evenly with spice mixture (just less than 1 tsp per breast).
Spread Chicken with hummus
Then, spread 2 TBS hummus on each chicken breast and drizzle the top of the hummus with lemon juice.If desired, add an extra dash of paprika on top of the hummus.
Bake
Bake for 25- 30 minutes, until the chicken reaches an internal temperature of 160 degrees F. I always recommend using an instant read thermometer to check the temperature of meat to make sure it is perfectly cooked.
Serve
I love serving this baked hummus chicken over a yummy salad (like this Greek Salad and this quinoa salad), with homemade tzatziki sauce and a side of homemade no knead bread. Sometimes I slice it up and serve it inside pita bread! We also love making roasted broccoli or roasted veggies to serve alongside this recipe.
Store
This hummus chicken makes great leftovers, simply store it in an airtight container in the refrigerator for 3-5 days.

How can you tell when chicken is done?
The best way to know for certain your chicken is fully cooked (and not over cooked) is to use an instant read thermometer. Cook the chicken until the internal temperature is 160-165 degrees F.
